Vegan cake – Today we cook


The carrot pie, how many memories! 
One of those sweets that I could bring to my childhood, when I was eating with a well-known industrial snack (rare times in which my grandmother did not make me a sweet cake with her hands) made with carrots. Today I propose the homemade version of those snacks: healthy, without animal derivatives and rich in vitamin C. Ideal for breakfast or snack.

Preheat the oven at 180 °.

Sift flour with yeast. In a bowl, combine the oil, milk and orange juice, while in the other place the flour, the grated carrots and lightly stuffed with a kitchen jug, ginger and sugar. Combine the liquids with the solid compound and mix with the whips until a soft compound is obtained. Pour the mixture into a cake of about 20 cm in diameter lined with baking paper and bake at 180 ° for about 35 ', 40' or until a stain inserted into the sweet will dry out. Let it cool, then fry and serve with icing sugar.
